Story 3 – Macro/Micro Story

Daisy Rodriguez, a student at Cabrini University, did not have the childhood one would expect. After moving to the United States from Puerto Rico at the age of 9 with her mother and four younger siblings, Daisy first encountered food insecurity. This was a huge shock to her as she lived a fairly comfortable life  in Puerto Rico. Prior to their arrival to the United States, her mother was a nurse. Due the language barrier, it was difficult for her mother to obtain a nursing job in the United States. As a result, Daisy’s mother had to take a lower paying job to support her family. Money was tight in Daisy’s household, leaving little room for grocery expenses. At the age of 9, Daisy noticed that there was not enough food to feed her family. Portion sizes were small and her mother would frequently skip meals so Daisy and her siblings could eat.

Daisy is not the only one who struggled with food insecurity as a child.  She is joined by 6.5 million children across the United States who come from  food insecure households. In a country where there is an overabundance of food, it can be hard to believe that a food insecurity struggle exists.  As Tom O’Donnell, professor for the Food Insecurity ECG class, points out that food insecurity “ refers to people who are just not sure where they are going to get their next nutritious meal from.”

At the age of 13, Daisy’s mother was able to find a nursing position. Thankfully, this gave her family a steady income and pulled her family out of food insecurity.   Today, Daisy is more then willing to share her story to help others. She notes that food insecurity can happen to anyone.
